Opinel

Opinel knives are inexpensive wooden handled French twistlock folders. The ordinary model has a straight blade and a handle which 
flares out at the butt.

I like them, because the carbon steel blade is convex ground with no bevel, so they cut well. Also, they come in many sizes, from tiny to huge, so you can find one which fits your hand and the task. I usually use sizes 6 to 10.

Some models can also be had in stainless steel. The stainless ones have darker handles.
